Ingredients for 4 servings

  • SAUCE:
  • 2 Tablespoons Unsalted Butter
  • 3 1⁄2 Tablespoons All-Purpose Flour
  • 1 1⁄2 Cups Whole Milk
  • 1 3⁄4 Cups Beecher’s Flagship Cheese, Grated
  • 1⁄4 Cup Beecher’s Just Jack Cheese, Grated
  • 1⁄2 Teaspoon Coarse Salt
  • 1⁄4 - 1⁄2 Teaspoon Chipotle Chili Powder
  • 1⁄8 Teaspoon Garlic Powder
  • PASTA & TOPPING:
  • 3 1⁄4 Cups Penne Pasta
  • 1⁄4 Cup Beecher’s Flagship Cheese, Grated
  • 1⁄4 Cup Beecher’s Just Jack Cheese, Grated
  • 1⁄4 - 1⁄2 Teaspoon Chipotle Chili Powder

Preparation

Preheat oven to 350 degrees.

In a saucepan over medium heat, prepare the sauce by melting butter; whisk in flour and cook for 2 minutes. Slowly stir in milk and cook until sauce thickens; about 10 minutes, stirring frequently. Remove from heat. Add cheeses, salt, chili powder and garlic powder. Stir until cheese is melted and all ingredients are incorporated. Set aside.

Cook pasta 2 minutes less than package directions. Rinse in cold water and drain. In a medium bowl, combine the pasta and sauce; carefully mix thoroughly. Oil an 8-inch baking dish and add pasta. Sprinkle top with cheese and chili powder.

Bake uncovered 20 minutes. Let stand 5 minutes before serving.
