Servings: 6

Time: 30 min

Ingredients

  • 1 1/2 lbs swai filets
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • pinch of cayenne pepper
  • 1/4 tsp garlic powder
  • 1 tsp coriander
  • 1 package corn tortillas
  • 2 cups cabbage, shredded

Crema

  • 1/4 cups green onions, thinly sliced
  • 2 tbsp cilantro, chopped
  • 1/4 cups mayonnaise
  • 1/3 cups sour cream
  • 1 tsp lime zest
  • 1 1/2 tsp lime juice
  • 1/4 tsp salt
  • 1/2 tsp garlic, minced

Process

  1. Preheat oven to 425F.

  2. In a small bowl add all of the crema ingredients and mix to combine. Set aside.

  3. Prepare a baking sheet with nonstick cooking spray.

  4. Combine seasonings together in a small bowl. Mix well, then sprinkle over both sides of fish and place on the prepared baking sheet.

  5. Bake for 9 minutes or until fish flakes easily with a fork being twisted into the fish filet.

  6. Remove from oven, and break up the fish with a fork into smaller pieces to fit onto the tortilla. Top each tortilla with shredded cabbage, a few pieces of fish, crema and an additional squeeze of lime.
