Taco Soup is a weeknight crowd-pleaser that uses the spices that you have hanging in your pantry. A few cans of beans, tomatoes, corn, and a pound of ground meat come together for a quick and filling dinner.

Ingredients
- 1 lb lean ground beef or ground turkey
- 1 sweet onion
- 4 cloves garlic (or 2 tsp garlic powder)
- 4 tsp chili powder
- 2 tsp cumin
- 2 tsp salt
- 1 tsp dried oregano
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp ground black pepper
- 28 oz can crushed tomatoes
- 4 oz can green chiles
- 15 oz can kidney beans (rinsed and drained)
- 15 oz can black beans (rinsed and drained)
- 17 oz can corn (drained)
- 2 cups beef broth
- 1 avocado (optional, for garnish)
- 1/2 cups crushed tortilla chips (optional, for garnish)
- 1/2 cups sour cream (optional, for garnish)
Process

Heat a large soup pot over medium heat. Brown the meat and remove any grease, if needed. Add onion, cooking until soft. Add remaining ingredients and stir to combine.

Bring to a low boil, then reduce heat, cover and simmer for 20 minutes, stirring occasionally, before serving. Garnish with desired toppings.
