Slow-Cooker Corn and Jalapeno Dip

With this hearty dip on the table, you'll be game-day ready. Scoop with chips or bread, and top with chicken for a little extra protein.

Ingredients

  • 4 slices bacon, diced
  • 4 1/2 cups corn kernels
  • 2 jalapenos, seeded and diced
  • 1/2 cups sour cream
  • 1 cup pepper jack cheese
  • 1/4 cups crumbled cotija cheese
  • salt and pepper, to taste
  • 8 oz cream cheese, cubed
  • 2 tbsp chopped fresh cilantro

Process

  1. Fry bacon and cook until crisp, about 6-8 minutes. Drain on paper towels and set aside.

  2. Combine corn, jalapenos, sour cream, pepper jack and cotija cheese in a slow cooker; stir and season with salt and pepper to taste. Top with cream cheese. Cover and cook on low heat for 2 hours. 

  3. Remove lid from slow cooker and stir mixture until cream cheese is thoroughly mixed in. Replace lid and cook on high for 15 more minutes.

  4. Serve warm, with bacon and cilantro as garnish.
