Ingredients
- 15 oz can of butter beans, drained
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 2 tbsp parsley, chopped
- 1 tsp Dijon mustard
- salt and pepper, to taste
Process

Whisk together olive oil, lemon juice, garlic, parsley, and mustard. Combine in a bowl with butter beans, stirring to coat. Taste and season with salt and pepper. Serve right away or marinate a few hours for stronger flavors.
