Summer Butter Beans

Ingredients

  • 15 oz can of butter beans, drained
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 2 tbsp parsley, chopped
  • 1 tsp Dijon mustard
  • salt and pepper, to taste

Process

  1. Whisk together olive oil, lemon juice, garlic, parsley, and mustard. Combine in a bowl with butter beans, stirring to coat. Taste and season with salt and pepper. Serve right away or marinate a few hours for stronger flavors.
