Sunshine Soup

Soup doesn’t have to be drab! Turmeric for color, cashews, chickpeas and cauliflower for creaminess.

Servings: 4

Time: 4 hours


Ingredients

  • 2 tbsp  olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, chopped
  • 1 head of cauliflower, chopped into florets
  • 1 cup cashews
  • 1 tbsp turmeric
  • 7-8 cups water
  • 2 tsp salt
  • squeeze of lemon
  • 2 14 oz cans chickpeas
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • parsley for serving

Process

  1. Combine ingredients in a crockpot; cook on low for 6 hours or high on 4. 

  2. Use a blender or immersion wand to puree all the ingredients. Sprinkle with parsley.
