Sunshine Soup

Soup doesn’t have to be drab! Turmeric for color, cashews, chickpeas and cauliflower for creaminess.

Time: 4 hours
Ingredients
- 2 tbsp olive oil
- 1/2 onion, chopped
- 2 cloves garlic, chopped
- 1 head of cauliflower, chopped into florets
- 1 cup cashews
- 1 tbsp turmeric
- 7-8 cups water
- 2 tsp salt
- squeeze of lemon
- 2 14 oz cans chickpeas
- 1 tsp cumin
- 1 tsp smoked paprika
- parsley for serving
Process

Combine ingredients in a crockpot; cook on low for 6 hours or high on 4.

Use a blender or immersion wand to puree all the ingredients. Sprinkle with parsley.
