Place coconut, almonds and cashews into food processor, pulsing until everything is chopped into small pieces. Place nut mixture in a bowl and set aside.
Put dates into the food processor and pulse until a paste forms.
Add nut mixture back into the processor with the dates, and ingredients for variations. Pulse until well combined.
Using about 1 tablespoon of dough, form the dough into balls. Eat right away or store in fridge with parchment paper between them for 1-2 weeks or freeze for up to 3 months.
