Time: 15 mins
Blanch beans by adding to boiling water for 2-3 minutes, and then immediately transferring to a cold water ice bath. (We used a combination of green beans and peas, but you could use one or the other.)
Prepare the dressing by mixing the garlic, Dijon, salt and pepper. Slowly add oil, and mix well. Add lemon and vinegar. There will be more dressing than needed so dress beans as desired, adding herbs and cheese.
