For strawberries: Preheat oven to 375 degrees, and line a baking sheet with parchment paper.
Toss strawberries in a bowl with honey, balsamic vinegar, and a pinch of salt. Spread strawberries in a single layer over prepared sheet, and roast for 10 minutes. Let cool.
For whipped goat cheese: Combine goat cheese, honey, and vanilla extract and whip until smooth.
Spread thick layer of whipped cheese over toast; top with strawberries. Garnish with thyme and/or basil, and drizzle with balsamic and/or honey.
