Preheat your air fryer to 380°F, and lightly spray basket with non-stick spray.
While the air fryer is preheating, mix the apple cubes into a bowl with 1 tbsp maple syrup, the coconut oil, and cinnamon.
Add coated apple cubes to the air fryer basket in a singe layer, and cook for 10-14 minutes, shaking halfway through. The apples are done once they're golden and slightly crisped on the outside, while still tender on the inside.
Remove from the fryer and toss in the remaining 1 tbsp of maple syrup.
Pair with vanilla ice cream, oatmeal, or enjoy on their own!
