Sir Sloppy Pepper

Ingredients for 4 servings

  • 3 Bell Peppers (Any Color), 2 Halved At Stem, Seeded 1 Chopped
  • 1 Pound Lean Ground Beef
  • 1⁄2 Sweet Onion, Chopped
  • 1 Jar Sir Kensington Spiced Ketchup
  • 3 Tablespoon Red Wine Vinegar
  • Olive Oil
  • 4 Slices Cheddar Cheese, Halved

Preparation

Turn oven to low broil.

In a baking safe dish, place peppers halves and drizzle with a touch of olive oil. Broil each side for 5 minutes or until just starting to char. Remove from oven.

Preheat oven to 350 degrees.

In a medium skillet, brown ground beef. Drain any residual fat. Add chopped bell pepper and onion; sauté until softened. Reduce heat to simmer, stir in Sir Kensington Spiced Ketchup and red wine vinegar; simmer for 5 minutes.

Add cheese to the base of the peppers, then fill with the Sir’s Sloppy beef mixture.

Bake for 15 minutes adding the remaining cheese in the last few minutes.
