Meatloaf Cupcakes

Ingredients for 6 servings

  • 1 Package Stuffing Mix
  • 1 Cup Water
  • 1 Egg
  • 2 Tablespoons Hickory Barbecue Sauce
  • 1 Pound Lean Ground Beef
  • ½ Cup Parmesan Cheese
  • Glaze: OPTIONAL
  • 1 Tablespoon Brown Sugar
  • ¼ Cup Ketchup
  • 1 Teaspoon Dry Mustard


Preheat oven to 375 degrees. In a large bowl add the stuffing mix and the water, mix well. Add the ground beef, barbecue sauce, egg and parmesan cheese. Mix until just combined.
In an ungreased muffin tin add about 1/3 cup of the meat mixture. This should make about 12 equal Meatloaf Cupcakes.
In a small bowl add the brown sugar, ketchup and dry mustard. Mix to combine. Spoon the glaze over the cupcakes, if desired. Bake for 18-22 minutes or until the internal temperature reaches 160 degrees.
