Ingredients for 6 servings
- 3 Stalks Leeks
- 1 Pint Heavy Cream
- 1 ½ Cups Grated Parmesan Cheese
- ½ Teaspoon Salt
- ¼ Teaspoon Pepper
- ½ Cup Shredded Parmesan Cheese
Preheat oven to 425 degrees.
Wash leeks thoroughly and cut leeks into ½” disks, discarding the dark green portion of the leek. Put the leeks into a bowl, being careful to keep them in their disk form without it separating into individual rings. Add the heavy cream, grated parmesan cheese, salt and pepper, and mix gently using your hands.
Arrange the leeks in a 13x9 baking pan packing them in tightly. Cover with foil and bake for one hour. Remove foil and continue baking for another 20 minutes. Just before removing from the oven top the leeks with the shredded parmesan, and broil if desired for additional color. Allow a few minutes to cool before serving for the sauce to set up.
