Breakfast Cookie

Ingredients for 6 servings

  • ¾ Cup Whole Wheat Flour
  • ½ Cup All Purpose Flour
  • ½ Teaspoon Baking Soda
  • 2 Teaspoons Apple Pie Spice
  • ¼ Teaspoon Salt
  • 2 Tablespoons Unsalted Butter
  • ¼ Cup Canola Oil
  • ¼ Cup Dark Brown Sugar
  • 3 Tablespoons Granulated Sugar
  • 1 Egg
  • ¼ Cup or 1 Small Jar Carrot Baby Food
  • 1 Teaspoon Vanilla Extract
  • 1 Cup Rolled Oats
  • 1 Cup Bran Flakes
  • 1/3 Cup Craisins®
  • ½ Cup Walnuts


Preheat oven to 350 degrees.
Whisk together flours, baking soda, apple pie spice and salt in a medium to large bowl. In a mixer combine butter, oil and sugar and mix on high for 1 minute. Add egg, carrot baby food and vanilla. Mix. Add flour mixture to the mixer and mix until combined. Add oats, bran cereal, Craisins® and walnuts; mix until just incorporated.
Prepare a large cookie sheet by lining with parchment paper. Scoop the cookie dough and drop cookies about 2-3 inches apart onto the cookie sheet using an ice cream scoop. Moisten your hand and gently press cookies down to flatten. Bake for 15 -18 minutes or until golden, but still soft. Cool completely before enjoying.
