
Ingredients for 6 servings
- 2 Cups Fresh Blueberries
- 5 Mini Peppers, Halved, Seeded and Diced
- 1 Large Shallot, Minced
- 1 Jalapeño, Minced
- ¼ Cup Cilantro, Chopped
- ¼ Cup Lime Juice
- 12 Ounce Bag Food Club® Mango Chunks, Thawed
- Kosher Salt
- Coarse Ground Black Pepper
- Extra Virgin Olive Oil
- Corn Chips
Preparation
In a medium bowl add all of the prepped ingredients. Season with salt and pepper, taste for seasoning. Drizzle with extra virgin olive oil and chill if desired. Serve as is with corn chips or on salmon or fish tacos.
