Banana Cake

Ingredients for 8 servings

  • 1 Package Yellow Cake Mix
  • 1 Cup Ripe Bananas, Mashed (About 3 Bananas)
  • 1 Cup Darigold® Sour Cream
  • 3 Large Eggs
  • 1⁄4 Cup Oil
  • Frosting:
  • 2 8 Ounce Packages Cream Cheese, Softened
  • ½ Cup Darigold® Butter, Softened
  • 5 ½ Cups Powdered Sugar
  • 1 Tablespoon Vanilla
  • 2 Teaspoons Lemon Juice


Preheat oven to 350 degrees.

In a large bowl, mix the first 5 ingredients in a mixer on low until moistened, scraping bottom and sides. Beat on medium speed for 2 minutes. Pour into two 8 inch greased and floured round cake pans. Bake for about 35 minutes or until a toothpick comes out clean. Cool completely.


Beat cream cheese and butter in a mixer until well blended. Gradually beat in the powdered sugar then add the vanilla and lemon juice.


Carefully remove cakes from pans and place one top-side down on plater. Spread frosting over the bottom layer (you can also add slices of banana). Top with the other cake, top-side up. Frost remainder of the cake. Top with banana chips, banana slices or fresh berries.
