Chicken Lettuce Wraps

Ingredients for 6 servings

  • 2 Large Boneless, Skinless Chicken Breasts, Cooked & Finely Chopped
  • 1 Tablespoons Fish Sauce
  • 1-2 Tablespoons Sriracha Sauce
  • 1 TablespoonsWater
  • Zest of 1 Lime
  • 1 ½ Tablespoons Fresh Lime Juice
  • ¼ Cup Green Onion, Thinly Sliced
  • ½ Cup Cilantro, Chopped
  • 1 Head Iceberg or Butter Lettuce
  • ²⁄3 Cup Mushrooms, Finely Chopped
  • 1 (8 Ounce) Can Water Chestnuts, Finely Chopped
  • 3 Cloves Garlic, Minced

Preparation

In a small bowl, mix the fish sauce, Sriracha sauce, and water. Pour into skillet, add the chopped chicken and cook on medium high heat. Cook until moisture is mostly absorbed.
Add to the skillet the following: lime zest and juice, green onions, cilantro, mushrooms and water chestnuts. Stirring to combine and cooking until mushrooms are softened.
Serve mixture on a leaf of lettuce.
