Strawberry Balsamic Brie Grilled Cheese

Ingredients

Roasted Balsamic Strawberries

  • 1 lb strawberries, hulled and quartered
  • 3 tbsp honey
  • 3 tbsp aged balsamic vinegar

Sandwich

  • 4 slices sourdough
  • room temperature butter, for grilling
  • 6-8 oz sliced brie cheese
  • 2-3 tbsp fresh basil, chopped

Process

  1. Preheat oven to 350°F.

  2. In a medium bowl, pour the honey and balsamic vinegar over the strawberries. Mix the ingredients together, taking care not to squish the berries.

  3. Place strawberries on a baking sheet and roast for 30-40 minutes, or until the strawberries are soft, but not mushy.

  4. Once the strawberries are roasted, warm a skillet on medium heat.

  5. Butter the outer sides of the bread. On the inside slices, layer 3-4 slices of cheese, then top with 2 tablespoons of balsamic strawberry sauce and a tablespoon of basil. Top with the other slice of buttered bread.

  6. Cook on each side for about 3 minutes or until golden brown and cheese melts. Repeat with second sandwich. Slice and enjoy!
