Time: 1 hour 30 minutes
Add granulated sugar to a ceramic saucepan, along with 3 tbsp of orange zest. Massage the zest into the sugar with your fingertips to help release the oil and give the curd a bright, citrusy flavor.
Add in the 6 egg yolks (or 3 large eggs) and whisk the ingredients together until well combined. Then mix in the freshly squeezed orange juice and salt.
Cook over medium-low heat, stirring constantly until the mixture thickens, about 20-25 minutes. Once it's thick enough to coat the back of a spoon remove from the heat.
Add in the cold butter pieces, and mix until the butter is fully melted and all ingredients are combined.
Pour the orange curd into a separate bowl through a mesh strainer, then place in the fridge to cool and thicken before using. Enjoy!
