Preheat the oven to 375, and grease mini muffin tin.
Cut puff pastry into 24 equal squares.
Cube brie into half inch pieces.
Line each muffin cup with puff pastry, then add brie cubes on top.
Add topping of choice (cranberry sauce or carmelized onion) and bake for 15-20 minutes, or until golden brown and the pastry is cooked through.
To make the cranberry topping, combine all cranberry sauce ingredients in a small saucepan over medium heat.
Once berries begin to burst and bubble, bring heat down to a summer and allow sauce to thicken for 20 minutes.
Remove from heat and add orange zest (if desired).
To make the carmelized onions, start by slicing the onions into thin pieces.
Combine butter and olive oil in a large saucepan over medium heat.
Once the butter is melted, add onions to the pan and cook on medium low heat until the onions are largely reduced, evenly brown and carmelized, about 30-45 mins.
Remove from heat and add salt and pepper to taste.
