Cilantro Lime Steak Bowls with Fresh Corn Salsa

What do flank steak, corn on the cob and avocado all have in common? They’re all part of your next favorite dinner.

Ingredients

Cilantro Lime Steak Bowl

  • 2 lbs flank steak
  • 1/2 cups avocado or olive oil
  • zest of 1 lime
  • juice of 2 limes
  • 4 cloves garlic, minced
  • 1/2 cups chopped cilantro
  • 2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 4 cups cooked rice or substitute of your choice
  • 2 avocados, sliced
  • 1 15oz can of black beans, heated
  • 1 cup shredded cheddar cheese
  • 1/2 red onion, diced

Corn Salsa

  • 3 cups grilled corn kernels (recipe also works with raw corn, if preferred)
  • 1 medium red onion, finely chopped
  • 1 avocado, diced
  • 1/2 cups fresh cilantro, finely chopped
  • 1-2 medium jalapeños, finely chopped (use 1 for more mild salsa, and 2 for more spicy salsa) 
  • juice of 2 limes
  • 1 tbsp white wine vinegar
  • 1/4 tsp chili powder
  • 1/4 tsp ground cumin
  • 1/2 tsp fine salt

Process

  1. In a small bowl, whisk together the oil, lime juice, lime zest, garlic, cilantro, salt, and pepper. Add your flank steak to a large ziploc bag and pour the prepared mixture on top, making sure the steak is evenly coated on both sides.

  2. Seal the bag and place in refrigerator. Allow to marinate for 30 minutes to 3 hours.

  3. While steak is marinating, prepare the corn salsa by mixing all ingredients together in a medium bowl. 

  4. Adjust the salsa to taste with more salt, vinegar, lime juice, and jalapeño. Add to the fridge to marinate for at least 20 minutes. (Keeps well in the refrigerator, covered, for up to 4 days.)

  5. Once your steak has marinated long enough, heat your grill to medium high and grill the steak for 10 minutes each side, or until desired internal temperature is reached.

  6. Place the steak on a cutting board and allow to rest for 10 minutes. Slice into thin strips against the grain, or cubes to serve.

  7. Assemble bowls with rice, steak, avocado, black beans, corn salsa, cheese, onion and any other desired toppings. Enjoy!
