Cheesy Spinach Baked Rice

Preheat oven to 350 degrees. Prepare a 11x7 baking dish with cooking spray or greased with butter.
Combine the spinach, rice, 1/3 cup melted butter, cheeses, shallot, garlic, eggs and half & half in a medium to large bowl. Add salt and pepper and stir to combine.

Spring Dipping Aioli

In a large stock pot bring water to a boil. Add potatoes and salt to the water and boil uncovered 15-20 minutes or until just fork tender. Drain the potatoes, return to the stock pot and cover with a towel allowing the potatoes to steam around 5-10 minutes.

Cheesy Cauliflower Soup

Heat a large sauce pan over medium to medium high heat. Add the butter to the pan, and next the cauliflower, shallots, and salt and pepper; cooking for 8 minutes. Add garlic, and cook an additional 1 minute. Sprinkle in the flour and stir into the veggies, it should look grainy, like wet sand. Slowly whisk in the broth a little at a time, stirring up the cooked bits on the bottom of the pan.

Cheeseburger Soup

Brown the ground beef in a large skillet, and do not drain fat. Once the meat has browned add the onion and celery and cook until translucent and starting to soften. Add the flour, Worcestershire, and garlic powder, stirring to combine, cooking for 1-2 minutes.

Street Tacos

Prepare all of your veggies and set aside. Heat tortillas and keep warm as you prepare the steak.
Prepare steak by cutting into ½” dice, being sure to cut the steak against the grain. Season the meat with the chili powder, cayenne pepper, season salt and pepper.

Gluten Free Chicken Cordon Bleu

Preheat oven to 375 degrees.
In a large bowl mix together the chicken soup, sour cream, Dijon mustard, chicken, ham, broccoli and pepper. Add the ingredients to a 13x9 pan and spread evenly. Layer the casserole with Swiss cheese slices, some will overlap.

Buffalo Chicken Pinwheels

In a food processor add the cream cheese, hot sauce, blue cheese, shredded cheese and green onions and pulse until it just comes together. Remove the mixture and put into a medium bowl and add chicken, stir until combined. Spread ¾ cup of mixture on top of one tortilla, getting close to the edges. Add a few mixed greens to the center of the tortilla forming a straight line and roll up tightly.

Pom Asian Salad

Category:

In a large bowl add the mixed greens. Add the Asian pear, Pomegranate Arils and goat cheese crumbles. Top the salad with desired amount of dressing, toss and serve.
