Ingredients for 6 servings
- 1 ½ Pounds Swai Fillets
- 1 Teaspoon Ground Cumin
- ½ Teaspoon Paprika
- Pinch of Cayenne Pepper
- ¼ Teaspoon Garlic Powder
- 1 Teaspoon Coriander
- 1 Package Corn Tortillas
- 2 Cups Cabbage, Shredded
- Crema :
- ¼ Cup Green Onions, Thinly Sliced
- 2 Tablespoons Cilantro, Chopped
- ¼ Cup Mayonnaise
- 1/3 Cup Daisy® Sour Cream
- 1 Teaspoon Lime Zest
- 1 ½ Teaspoons Lime Juice
- ¼ Teaspoon Salt
- ½ Teaspoon Garlic, Minced
Preparation
Preheat oven to 425 degrees. Prepare a baking sheet with non stick cooking spray.
In a small bowl prepare crema, add all of the crema ingredients and mixing to combine. Set aside.
Combine all of the fish taco seasonings together in a small bowl. Mix well, sprinkle over both sides of fish and place on the prepared baking sheet. Bake for 9 minutes or until fish flakes easily with a fork being twisted into the fish fillet. Remove from oven, and break up the fish with a fork into smaller pieces to fit onto the tortilla. Top each tortilla with shredded cabbage, a few pieces of fish, crema and an additional squeeze of lime.
