Sweet Potato Crisp

Ingredients for 6 servings

  • 1 Cup Flour
  • 1⁄3 Cup Brown Sugar
  • 1 Cup Pecans, Chopped
  • 1⁄3 Cup Butter, Melted
  • 3 Cups Sweet Potatoes, Cooked & Mashed
  • 1 Cup Sugar
  • 1⁄2 Teaspoon Salt
  • 1 Teaspoon Vanilla
  • 2 Eggs, Well Beaten
  • 1⁄2 Cup Butter, Melted

Preparation

Preheat oven to 375 degrees.

In a bowl, combine the first four ingredients, mix together and set aside for the crust. In a mixing bowl, add the remaining ingredients and beat for 3-4 minutes until well combined and fluffy.

Pour sweet potato mixture in an 8 x 10 inch backing dish. Bake for 25 minutes. Remove from oven, top with crust and return to oven for an additional 10 minutes.
