Apple Toffee Toast

Preheat oven to 350 degrees.

Place half the cubed bread in a greased 9 x 13 inch pan. Top with apples. In a mixer, blend the cream cheese, sugars, apple cider and 1 teaspoon vanilla. Stir in the English toffees and pour over the apples. Top with remaining bread cubes.

Yogurt Pie

In a medium bowl, beat pudding mix, milk and yogurt with a mixer for about 1 minute or until smooth. Fold in whipped topping. Layer bananas in the bottom of the crust. Add the pudding mix evenly over the bananas. Top with berries of choice.

Cover and freeze 3 hours or until firm.

Pull from freezer 10-15 minutes before serving.

Pumpkin Shmumpkin Cake

Preheat the oven to 350 degrees. Generously grease a 9x13 inch baking pan; set aside.
In a large bowl, mix together the spice cake mix and canned pumpkin (do not add oil or eggs as box instructs) until well blended. Spread evenly into the prepared pan and bake for 25 to 30 minutes, or until a knife inserted into the center comes out clean.
Chill for at least 1 hour.

Fruit Dip-Sherbet

Mix yogurt, sugar, orange zest and juice concentrate in a medium bowl until blended. Gently stir in the Cool Whip.

Cover and refrigerate for several hours or until chilled. Serve with fresh cut fruits.

Crock Pot Pear Crisp

Peel, chop and seed the English cucumber. Salt them and place in a strainer with a bowl underneath to allow liquid to drain for at least one hour.
Add all ingredients together in a medium bowl and stir until well combined, tasting for seasoning and adding additional kosher salt if desired.
Serve chilled with fresh vegetables or pita chips.

Sushi-Ish

In a bowl, combine the cooked rice, vinegar, sugar and salt. Let cool to room temperature.

Chop chicken and combine with the teriyaki sauce. Allow to marinate for at least an hour before using.

Spinach Roll-Ups

In a bowl, mix the first 5 ingredients until well blended; set aside. Brush 1 phyllo sheet lightly with butter and top with 2 more phyllo sheets, lightly brushing each layer with butter. Repeat process to make a total of 5 seperate phyllo stacks.
