Ingredients for 6 servings
- 3 Tablespoons Butter
- 3 Eggs, Beaten
- 1 Cup Half & Half
- 1 Nine Inch Pie Shell
- 2 Tablespoons Green Onions, Chopped
- Salt & Pepper
- 8 Strips Bacon, Cooked & Chopped
- 3 Tablespoons Maple Syrup
- 2 Teaspoons Fresh Thyme, Chopped
- 1⁄2 Cup Cheddar Cheese, Shredded
Preparation
Preheat oven to 375 degrees.
Using a cookie cutter, cut the pie crust to fit mini muffin tins and partially bake them for about 3-5 minutes.
In a large skillet, saute green onions (and red pepper if making Crab Quiche) in butter over medium heat. Stir in crab meat, bacon or ham depending on which recipe you are making. Season with salt and pepper. Add wine, syrup and/or thyme depending on which variety you are making and cook for 1 minute. Remove from heat and cool.
In a large bowl, beat eggs until light. Whisk in half & half and meat mixture. Pour into pie crusts and sprinkle with selected cheese.
Bake for 15-20 minutes or until puffed up and golden brown.
