Ingredients for 6 servings
- 6 Cups Torn Romaine Lettuce
- 1 Cup Tomato, Chopped
- 3⁄4 Cup Red Onion, Thinly Sliced
- 3⁄4 Cup Cucumber, Cubed
- 3⁄4 Cup Feta Cheese
- 18 Pitted Kalamata or Ripe Olives
- 3 Tablespoons Olive Oil
- 1 Tablespoon Lemon Juice
- 1 1⁄2 Teaspoons Dried Oregano
- 2 1⁄2 Teaspoons Prepared Mustard
- 1⁄4 Teaspoon Salt
Preparation
In a bowl, combine the first six ingredients. In a small bowl, whisk the remaining ingredients. Pour over salad and toss to coat.
Serve immediately.
